Remove pan juices and place in an airtight container. Cover ham with baking paper (parchment paper) then foil and place in the fridge until required – days and days ahead. On the day of, remove from the fridge and reheat in the oven at 160C/320F for around 1 hour, just to warm through and revitalise the glaze!
